5 ziarenek pieprzu
Do wyparzonego, wysuszonego słoika wsypujemy mąkę i wrzucamy resztę składników. Wlewamy połowę wody (przegotowana, przestudzona, jeszcze lekko ciepła) i dokładnie mieszamy. Wlewamy resztę wody, mieszamy.
Przykrywamy słoik ściereczką, zabezpieczamy sznurkiem lub gumką. Odstawiamy w suche, nienasłonecznione miejsce.
Codziennie mieszamy i przykrywamy z powrotem. Zakwas powinien być gotowy po około 3-5 dniach. Można codziennie próbować i porównywać kwasowość.
