Dlatego też podaję Wam mój sprawdzony przepis, który dodatkowo można modyfikować dodatkami. Można dodać na przykład świeżej kolendry (jest przepyszny!), wędzonej papryki w proszku, kuminu i kolendry w proszku, marynowanego jalapeño, suszonych pomidorów czy czegokolwiek na co przyjdzie Wam ochota.
250 g suchej ciecierzycy
1 łyżka tahini
50 g oliwy
Sok z 1 cytryny
2 ząbki czosnku
100-150 ml zimnej wody
10 g soli
Szczypta sody
Ciecierzycę namaczamy na noc w 1 litrze wody. Następnego dnia przekładamy ciecierzycę do garnka, wlewamy 1,5 litra wody, wsypujemy sól i szczyptę sody. Gotujemy przez około 2,5 godziny. Odcedzamy i odstawiamy do wystudzenia.
Wszystkie składniki miksujemy blenderem. Jedynie wodę możemy dolewać stopniowo, aż do pożądanej konsystencji. Przechowujemy w lodówce, spokojnie koło tygodnia.
